Slow-Cooker Lasagna? Sounds Too Good To Be True

2014-10-22 18.07.27

I had kind of an off day today and was craving some comfort food. What is it about comfort food that makes all your worries disappear? I didn’t want to spend hours in the kitchen, so I thought I’d browse through my slow-cooker recipes.  I took out my “Fix-It and Forget-It” cookbook and on the cover is this glorious picture of lasagna. What? Could it be? Lasagna made in a slow-cooker with no cooking of the noodles required? And jarred pasta sauce instead of cooking the sauce for hours?  Could it be that simple, and still taste good? I was intrigued and decided to test the recipe and put the sampling up against my daughter and her boyfriend – the ultimate lasagna lovers.

The recipe was simple enough to make. Simple ingredients, no fuss; throw it all into the slow cooker and a few hours later the promise was awesome lasagna. So I did just that and kicked back and let the slow-cooker do all the work. And, you know what? It turned out great – a very tasty sauce and yummy cheese all over the place. Both judges gave it a thumbs up, and I snuck in a second helping (to make me feel better, ya know?). I will make this again, except cut back on the amount of cheese used.

Here’s the recipe I got from my “Fix-it and Forget It” cookbook.  I’ll post the official recipe in my recipe vault to view and print.

So, now that I’ve had my comfort food fix, I’m gonna go cuddle up with my blankie.
