Asian-Style Chicken Meatball Lettuce Wraps

They are moist and delicious, and can be used in a multitude of ways.  Since the recipe makes 24, I suggest freezing what you don’t need for this recipe and then warming them up in your favorite marinara sauce and serving them up as spaghetti and meatballs. You can also reheat them and serve them on top of your favorite salad. The thing is – any way you choose to serve these, they’ll be totally yummy, and super healthy.

Ingredients
  1. For Meatballs
  2. 1 lb. ground chicken breast
  3. 1 whole egg
  4. ½ cup finely shredded carrots
  5. 3 finely chopped green onions
  6. ¼ cup oatmeal (add a little more if fixture is not firm enough to form)
  7. 1 tsp garlic powder
  8. 1 tsp onion powder
  9. ½ tsp kosher salt
  10. ½ tsp course ground black pepper
  11. 1 head butter lettuce leaves, rinsed and patted dry
  12. (1 head of lettuce makes 4-6 servings; use additional lettuce if serving more)
Ginger-Soy Sauce
  1. 1/3 cup soy sauce
  2. 2 ½ TBS rice vinegar
  3. ¼ tsp sugar
  4. 1 TBS fresh, peeled, finely grated ginger
  5. 1 tsp sesame oil
  6. 1 tsp sriracha sauce
Toppings
  1. ½ cup shredded cabbage
  2. ½ cup shredded carrots
  3. ¼ cup chopped green onions
  4. 2 tsp sesame seeds
Instructions
  1. Preheat oven to 350°F. Combine all ingredients except for lettuce leaves and cabbage - and mix well. Form into meatballs by scooping mixture by tablespoon full and rolling between your hands to form a ball. Drop each ball onto a parchment lined baking sheet sprayed with a bit of non-stick cooking spray. Bake 20-25 minutes until meatballs are firm and lightly brown. Makes about 24 meatballs. Meatballs not used for this recipe can be frozen and used in other recipes! Great with marinara sauce and whole grain pasta for easy weeknight spaghetti.
  2. While meatballs bake, combine all ingredients for sauce in a medium sized mixing bowl with a small wire whisk or spoon. Mix well and set aside.
  3. Make sliders by taking one lettuce leaf and filling with one meatball, top with shredded cabbage, carrots, green onions and sesame seeds, then drizzle with soy-ginger sauce.
