Grilled Romaine With Bacon, Cherries, Almonds & Feta

Grilled Romaine taken to a new level with cherries, feta and almonds.

Part two of my “meal on the grill” series is this super easy recipe for grilled romaine, kicked up a notch or two with dried cherries, almonds, bacon and feta cheese.

If you haven’t tried grilling romaine on the grill yet, you’ve got to start now. The first time I made grilled salad, I was a little hesitant about how it would turn out.  Really, salad on the grill? But, I was willing to take that leap of faith, and the leap was well worth it.

First of all let’s talk about the char.  It just adds a flavor level to the salad like none other. Then, with the balsamic vinegar and other smokey toppings like bacon, the salad takes on it’s own heavenly combination of yumminess. It’s sweet/savory/crunchy all in a healthy salad.

So, don’t wait. Don’t hesitate. Take out that head of romaine that we all have in our veggie drawer tonight and transform it to absolute delish using this recipe.

Grilled Romaine With Bacon, Cherries, Almonds & Feta

Ingredients
  1. 1 head of Romaine (cut in half lengthwise) any wilted leaves removed
  2. 2 TBS extra-light olive oil
  3. 4 slices crisply fried bacon
  4. ¼ cup sliced almonds
  5. 2-3 TBS dried cherries
  6. ¼ cup Feta crumbled
  7. 2 TBS balsamic vinegar
  8. salt and pepper to taste
Instructions
  1. Heat grill to medium high heat. Drizzle inside halves of romaine with olive oil. Place romaine halves insides down on grill. Grill until lightly charred (approx. 5 minutes).
  2. Remove from the grill and place on a serving platter. Top with bacon, almonds, cherries, and feta. Then drizzle with balsamic vinegar and add salt and pepper to taste.
  3. Slice both halves across diagonally in about 1 ½ inch strips, serve using salad tongs.
Notes
  1. You can make this salad using an outdoor grill or an indoor grill pan.
